A memory from childhood… roasted pumpkin seeds with grandma. Every fall we would make several batches of these healthy snacks. One after carving pumpkins and the other after making homemade pumpkin pie filling.
They are a very nutritious as well. 30g protein per 100g of seeds, high in zinc and other minerals make a great snack.
Roasted Pumpkin Seeds
2 cups raw pumpkin seeds
2 Tbsp butter, melted
1 tsp salt
Preheat oven to 250 degrees.
In a large bowl, add pumpkin seeds. Add melted butter and stir to coat. Sprinkle salt onto pumpkin seeds stirring till mixed well. Spread inone layer in shallow pan. Place in preheated oven for 2 hours, stirring every 20-30 minutes.
Change the recipe… have FUN! A little less butter, add some garlic, or season salt for a change up. Make it a sweet treat. Sprinkle with some sugar for a salty/sweet treat.
